Grilled Sweet Potatoes

 

                                                         Yummy!!!!!!

 

 

Ingredients:

  • 4 medium sweet potatoes
  • 1/4 cup melted butter
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

Preparation:

Cup sweet potatoes into 3/4 inch slices. Bring 3 quarts of water to a boil and add potatoes. Boil until potatoes are just starting to soften. Cool and peal. Combine butter, brown sugar and cinnamon, brush over potatoes. Place Potato slices on preheated grill over a medium low heat and cook for about 10 to 15 minutes, turning once. When the sweet potatoes as soft through the middle and browned on the surface they are ready.

New Goals

So lately I've been having some trouble staying on track with my diet and exercise goals. I've become lazy My ambition is seriously lacking in these departments. I haven't been doing terrible, but my drive is definitely slowing down. The last 3 days were the worst yet. I ate so much food and I did NO exercise..... unless you count lifting my fork to my mouth. According to my scale I gained 2 whole pounds a little weight back. I think that the reason for this is some extra stress in my life compounded with the fact that I'm just getting tired. I'm in the last stretch of my weight lose and I feel like I've been working on it forever. So I've decided I need a do over. I'm going to take a closer look at my goals and my reason for loosing weight to begin with.
  I started The 30 day shred last Friday and then I fell off the diet wagon. So today I'm starting over with Day 1. So my new end goal is to lose 12 pounds by the time I do The Warrior Dash in August. I know it's a huge goal to accomplish in a short amount of time but I think it's possible.  My plan is to stay within my calorie limit and run at least 3 days a week along with doing The 30 day shred every day. I also want to add some weight training in there too. I'm also going to reavaluate some the things that may be causing me extra stress and scream at the top of my lungs while pulling my hais out pray about them. If you have any other ideas that you'de like to share with me, feel free to do so.
